If there’s one dish that perfectly embodies the spirit of elegance and sophistication, it’s Canapés with Salmon and Cream Cheese. These bite-sized delights are the ultimate appetizer for any festive gathering, making them ideal for holiday parties, family dinners, or a luxurious weekend treat. With the richness of smoked salmon and the creamy, tangy bite of cream cheese, these canapés are simple yet indulgent and are sure to impress your guests.

What’s more, these canapés are incredibly easy to prepare, requiring only a handful of ingredients and minimal preparation time. Each canapé offers a balance of textures and flavours—smooth cream cheese delicately smoked salmon, and a dash of freshness from herbs and lemon. Let’s dive into the recipe and discover how you can make these sophisticated bites yourself.

Ingredients

To make 20-24 canapés, you’ll need:1 loaf of baguette or small crackers (or blinis, if you prefer)
  • 200g (7oz) smoked salmon, thinly sliced
  • 200g (7oz) cream cheese, softened
  • 2 tbsp sour cream or crème fraîche (optional, for extra creaminess)
  • 1 tbsp fresh dill, chopped (plus extra for garnish)
  • Zest and juice of 1 small lemon
  • 1 small red onion, finely chopped (optional, for a bit of crunch)
  • A handful of capers (optional, for extra brine)
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • Lemon wedges, for garnish

Instructions

Step 1: Prepare the Base

Slice the Bread: Begin by slicing your baguette into rounds about 1/2 inch thick. If you’re using crackers or blinis, you can skip this step. The bread will serve as the crunchy base for your canapés, and its texture will contrast beautifully with the smooth cream cheese and delicate salmon.

Toast the Bread (Optional): If you prefer a crispier base, lightly toast the bread slices in a dry skillet or under the broiler for a minute or two, just until golden and crunchy. Let the bread cool slightly before assembling the canapés. This will give it a perfect crispiness without being overly hard.

Step 2: Prepare the Cream Cheese Spread

Mix the Cream Cheese: In a small bowl, combine the softened cream cheese with sour cream or crème fraîche, if using. This will make the spread smoother and creamier. Stir until well combined.

Add Flavor: Add fresh dill, lemon zest, and a squeeze of lemon juice to the cream cheese mixture. The dill imparts a fresh, herbaceous flavour that pairs beautifully with the salmon, while the lemon zest and juice give a bright, citrusy tang that lightens up the richness of the cream cheese.

Season: Taste the mixture and season with salt and freshly ground black pepper. You can also add finely chopped red onion for a bit of bite and colour, though this is optional. The cream cheese should be well-seasoned, as it will balance the flavour of the salmon.

Step 3: Assemble the Canapés

Spread the Cream Cheese: Take your prepared bread slices or crackers and spread a generous layer of the cream cheese mixture onto each piece. Be sure to spread it evenly so that each bite will be creamy and full of flavour.

Top with Salmon: Lay a slice of smoked salmon on top of the cream cheese. Fold or roll the salmon slices neatly for a more elegant presentation. You want just enough to cover the bread and add that unmistakable, savoury richness.

Garnish and Add Final Touches: Sprinkle a few capers on top of each canapé for a burst of salty brine. If you didn’t use red onion in the cream cheese mixture, you can also add a few finely chopped pieces for a colourful and crunchy garnish.

Add Fresh Herbs: Finish off with a small sprig of fresh dill or a sprinkle of freshly ground black pepper to enhance the flavour and add a touch of green. A small wedge of lemon on the side makes for a beautiful and practical garnish.

Step 4: Serve

Arrange the canapés on a platter, carefully stacking them so they look inviting and elegant. You can also drizzle a little extra olive oil or a dash of lemon juice over them just before serving for added freshness. Serve immediately to enjoy the crispiness of the base and the rich, fresh flavours of the topping.

Tips for Success

  • Fresh Ingredients: The quality of the smoked salmon is key to these canapés. Choose a high-quality, thinly sliced smoked salmon for the best flavour. Organic or wild-caught options often have a richer, more delicate taste.
  • Make Ahead: You can prepare the cream cheese spread ahead of time and store it in the fridge for up to a day. However, it’s best to assemble the canapés just before serving to maintain the crispness of the base.
  • Customizable Bases: While baguette slices are traditional, you can switch things up and use blinis, rye crackers, or even cucumber slices for a different texture and flavour. Cucumbers can also add a refreshing, low-carb alternative.
  • Flavoured Cream Cheese: For an extra twist, you can experiment by adding flavours to the cream cheese, such as horseradish, garlic, or even a small drizzle of truffle oil for a luxurious touch.

Buttery sandwich spreads

Buttery sandwich spreads can elevate a simple sandwich to a culinary masterpiece.

Butter mixtures can be used in sandwiches for various reasons and occasions:

  1. Flavour Enhancement: Adding a butter mixture, like garlic herb butter or honey butter, can significantly enhance the flavour profile of your sandwich.

  2. Moisture Barrier: Butter acts as a barrier to prevent the bread from becoming soggy, especially when using ingredients like tomatoes or pickles.

  3. Texture Improvement: A creamy butter spread can add a smooth, rich texture to your sandwich, making each bite more enjoyable.

  4. Versatility: Butter mixtures can be customized with different herbs, spices, and other ingredients to create unique flavours. This allows you to tailor your sandwich to your taste preferences.

  5. Nutritional Benefits: Depending on the ingredients used, butter mixtures can add nutritional value. For example, adding nuts or seeds can increase the protein and healthy fat content.

Classic Spreads

  • Butter: A timeless classic that pairs well with a variety of fillings.
  • Mayonnaise: A versatile spread that adds creaminess and richness.
  • Hummus: A healthy and flavorful Mediterranean dip made from chickpeas.
  • Mustard: Adds a tangy kick to sandwiches, especially when paired with meats and cheeses.

Creamy Delights

  • Cream cheese: A versatile spread that can be flavoured with herbs, spices, or fruit.
  • Whipped butter: A light and airy spread that melts easily.
  • Aioli: A garlic-infused mayonnaise that adds a savoury flavour.
  • Herbed butter: Infuse butter with herbs like dill, parsley, or chives.

Sweet and Savory Combinations

  • Honey mustard: A sweet and tangy spread that pairs well with ham and cheese.
  • Sun-dried tomato pesto: A flavorful spread with a hint of sweetness.
  • Cranberry sauce: A tangy and sweet spread that is perfect for turkey sandwiches.
  • Apple butter: A sweet and slightly tart spread that is delicious with cheese or ham.

Exotic Flavors

  • Spicy mayo: Add a kick of heat to your sandwich with a spicy mayonnaise.
  • Chipotle aioli: A smoky and spicy spread that pairs well with grilled chicken or pork.
  • Sun-dried tomato pesto: A flavorful spread with a hint of sweetness.
  • Curry mayo: A creamy and flavorful spread with a hint of spice.

When choosing a buttery sandwich spread, consider the flavours of your fillings. For example, a spicy spread would complement a mild protein, while a sweet spread would be a great match for a savoury filling.

Canapés and tartines

Small sandwiches on toasted bread - canapés and tartines

Canapes are small snacks that are usually served on skewers. They can be made from various ingredients, such as cheese, fish, meat, vegetables, and fruit.
Canapes are often prepared for buffets, parties, celebrations, or as a light snack. For canapés, you can also bake thinly rolled puff pastry, cutting out various figures 5-6 cm in size with a notch or a knife.

For sandwiches on toasted bread, spicy snack foods are usually used in a variety of combinations: cold-smoked fish, caviar, herring, sharp cheese (Roquefort), seedless olives, pâtés and others.
It is so a beautiful, appetising, tasty snack that it can replace all other snacks if you prepare sandwiches of various products.  It is a good snack to serve before dinner for evening tea.

When are canapes prepared?

Canapes are usually prepared before serving to keep them fresh and appetising. They can be prepared in advance, but it is best to do so no more than a few hours before serving.

How long does it take to make canapes?

The time it takes to prepare a canape depends on the complexity of the recipe and the number of ingredients. It usually takes from 10 to 30 minutes. For example, simple canapés with cheese and grapes can be prepared in 10-15 minutes, while more complex options with fish or meat can take up to 30 minutes.

Canapés

Canapes are like little bites of joy. They are perfect for adding a touch of elegance to any gathering. Their small size makes them easy to eat while mingling, and the variety of toppings means there’s something for everyone. Whether it’s a classic combination of cheese and grapes or a more adventurous mix of smoked salmon and dill, canapés are always a hit at parties.

Tartines

Tartines, on the other hand, are more substantial and can be quite satisfying. They offer a great canvas for creativity, allowing you to layer flavours and textures on a single slice of bread. From a simple avocado and tomato tartine to a more elaborate creation with prosciutto, figs, and goat cheese, tartines can be both a delightful snack and a light meal.

Canapés offer a world of culinary possibilities, and the fillings are the stars of the show.

Classic Combinations

  • Cheese and charcuterie: A timeless pairing, try brie with fig jam, or prosciutto with melon.
  • Smoked salmon: Top a crisp cracker with smoked salmon, dill cream cheese, and a squeeze of lemon.
  • Seafood: Create mini seafood towers with shrimp, crab, and avocado.
  • Mini quiches: Fill pastry shells with a savoury egg custard and your favourite ingredients like spinach, bacon, or cheese.

Global Flavors

  • Mediterranean: Combine hummus, feta cheese, and roasted red peppers for a Mediterranean twist.
  • Asian: Try a spicy tuna tartare or a mini banh mi with pork belly and pickled vegetables.
  • Mexican: Top a tortilla chip with guacamole, salsa, and a dollop of sour cream.

Sweet and Savory

  • Sweet and savoury: Pair brie with a drizzle of honey and a sprinkle of sea salt.
  • Fruity: Top a crostini with goat cheese, grilled peaches, and a balsamic glaze.
  • Chocolate: Create a decadent chocolate ganache filling for a sweet treat.

Vegetarian and Vegan Options

  • Hummus and veggies: A classic vegetarian option, try adding roasted vegetables or a sprinkle of sumac.
  • Avocado and tomato: A simple yet delicious combination, perfect for a summer gathering.
  • Falafel: Serve falafel balls on pita bread with tahini sauce and fresh herbs.

Sandwiches: open and closed

Sandwiches are a versatile and delicious meal option that can be enjoyed anytime. In German, a sandwich is bread and butter; in common everyday terminology, it is a slice of bread with some snack food (cheese, ham, sausage, caviar, smoked meat or fish, tinned food, etc.).

There are open sandwiches, closed sandwiches (sandwiches) and small sandwiches on toasted bread canapés and tartines. The most common type of sandwich is a slice of bread with any product.

For open sandwiches, bread is cut into small slices about 1-1.5 cm thick, spread with butter (except when prepared with fatty foods) and garnished with various snacks. They come in many different varieties, but they can be broadly categorised into two main types: open-faced and closed-faced.

Popular Open-Faced Sandwiches

✓ Avocado Toast:
 A classic choice featuring ripe avocado, toast, and often topped with a squeeze of lemon, a sprinkle of red pepper flakes, and a poached egg.

✓ Grilled Cheese:
A comfort food staple that can be elevated with different types of cheese, bread, and additional toppings like bacon or tomato.

✓ Reuben:
A hearty sandwich with corned beef, sauerkraut, Swiss cheese, and Russian dressing on rye bread.

✓ Croque-Monsieur:
A French classic featuring ham, cheese, and bechamel sauce, often topped with a poached egg.

Closed-faced sandwiches

These sandwiches consist of two slices of bread with fillings in between.

Both slices are spread with butter, sometimes pre-mixed with various seasonings - mustard (for ham, sausage), grated cheese, horseradish (for fish), and sauces. On one slice of bread put the product, and the other tightly cover the top.

For the preparation of closed sandwiches, it is recommended approximately this combination of products:

✓ boiled ham and butter and mustard;

✓ boiled veal and butter and mustard;

✓ roast beef (roast meat) and butter;

✓ roast chicken and butter;

✓ cheese (can be grated) and butter;

tinned sardine paste and grated cheese;

✓ sliced herring and butter with eggs and mustard;

✓ cold smoked fish and butter;

✓ boiled fish and butter with horseradish;

✓ paste chopped nuts and garlic with mayonnaise.

Factors to consider when choosing between open and closed sandwiches:

  • Personal preference: The type of sandwich you choose will depend on your personal taste and preferences.
  • Occasion: Open-faced sandwiches are often considered more casual, while closed-faced sandwiches can be more formal.
  • Ingredients: Some ingredients, such as a large amount of filling, may be better suited for a closed-faced sandwich.

No matter which type of sandwich you choose, there are endless possibilities for personalization. You can experiment with different bread types, fillings, toppings, and sauces to create your perfect sandwich.
