Stewed Potatoes with Smoked Bacon: A Comforting Classic

There’s something truly special about the combination of tender, buttery potatoes and the rich, smoky aroma of crispy bacon. It’s the kind of meal that warms you from the inside out, filling your kitchen with irresistible flavours. This stewed potato dish is easy to make and incredibly satisfying, perfect for a comforting family dinner.

Servings: 4 portions

Ingredients:

  • 5 medium potatoes
  • 200g smoked bacon (or smoked pork belly)
  • 1 large onion
  • 2 cloves of garlic
  • 1 large carrot
  • 2 tablespoons vegetable oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • 500ml vegetable or chicken broth
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions:

  • Prep the Ingredients: Peel the potatoes and cut them into medium-sized cubes. Dice the smoked bacon into small chunks. Slice the onion and carrot, and mince the garlic. This preparation sets the stage for a smooth cooking process.
  • Sauté for Maximum Flavour: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced bacon and cook until it’s crispy and golden. The rendered fat will be your flavour base! If there’s an excessive amount of fat, you can carefully remove some, leaving just enough to coat the bottom of the pot. Now, add the sliced onions, minced garlic, and sliced carrots. Sauté these aromatics until they are soft and fragrant, about 5-7 minutes. Their sweetness will balance the savoury bacon.
  • Time to Add the Potatoes: Toss the potato cubes into the pot, stirring well to coat them with all those delicious bacon juices and rendered fat. Sprinkle in the smoked paprika and dried thyme, and add the bay leaf for an extra layer of aromatic depth. Stir everything together for about a minute, allowing the spices to toast slightly and release their aromas.
  • Let It Simmer: Pour in the vegetable or chicken broth. Give it a good stir to combine all the ingredients. Bring the liquid to a gentle simmer. Once simmering, cover the pot and cook for 25-30 minutes, stirring occasionally, until the potatoes are tender and infused with that incredible smoky goodness. You can easily check for doneness by piercing a potato cube with a fork.
  • Final Seasonings: Once the potatoes are tender, taste the stew and adjust the seasoning with salt and black pepper as needed. Remember, bacon can be salty, so add salt gradually. Remove the bay leaf before serving. Give the stew a final stir.
  • Serve & Enjoy: Ladle the hot stewed potatoes into bowls. Garnish generously with freshly chopped parsley. The vibrant green of the parsley will add a lovely fresh contrast. This dish pairs wonderfully with a slice of rustic bread to soak up all the flavorful broth, or a fresh green salad for a balanced meal.

Stewed potatoes with smoked bacon are the perfect balance of rustic simplicity and deep, rich flavours. It’s truly a dish that speaks to the soul.

I’d love to hear how you make it your own! Perhaps you’ll add a touch of cream for extra richness, or a sprinkle of fresh dill for a different herbaceous note. Enjoy your cooking adventure!

Instructions:

  • Preheat & Prep: Preheat your oven to 400°F (200°C). Cook your pasta according to package directions until al dente. Drain and set aside.

  • Bake the Chicken: Spread the chicken mixture in a single layer on a large sheet pan. Roast in the preheated oven for 15-20 minutes, or until the chicken is cooked through and lightly browned.
  • Add Pasta & Cheese: Carefully remove the sheet pan from the oven. Add the cooked pasta to the sheet pan with the chicken mixture. Toss gently to combine. Sprinkle evenly with Parmesan cheese and mozzarella/cheddar (if using).
  • Final Bake: Return the sheet pan to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly and the dish is heated through.
  • Serve: Ladle into bowls, and serve immediately with extra Parmesan cheese if desired.

Chef’s Tips:

  • Flavour Boost: A pinch of red pepper flakes adds a nice little kick.
  • Cheesy Crust: For an even richer top, broil for the last 2-3 minutes, watching carefully to prevent burning.
  • Make Ahead: You can chop the chicken and vegetables ahead of time. Cooked pasta can also be stored in the fridge for a day.

Shrimp Pasta with Tomato and Basil Sauce

Hey there, food lovers! Are you craving something quick, flavorful, and utterly satisfying that feels like it took hours to make, but comes together in a flash? Then you’ve hit the jackpot! This Shrimp Pasta with Tomato and Basil Sauce recipe is pure magic. It’s light, vibrant, and bursting with fresh flavours – perfect for a cosy weeknight dinner or even when you want to impress without the stress.

Servings & TimeYields: 2 generous servings
Prep time: 10 minutes
Cook time: 15-20 minutes
Total time: Approximately 25-30 minutes

Ingredients

For the Pasta:
  • 200g (about 7 oz) pasta of your choice (linguine, spaghetti, or tagliatelle work wonderfully!)
  • Salt for boiling water
For the Sauce & Shrimp
  • 2 tbsp olive oil
  • 2-3 cloves garlic, thinly sliced or minced
  • 250g (about 9 oz) raw shrimp, peeled and deveined (tail-on or off, your call!)
  • 1 can (400g / 14 oz) crushed tomatoes
  • 1/2 cup chicken or vegetable broth (or even pasta water!)
  • A generous handful of fresh basil leaves, roughly torn or chopped, plus more for garnish
  • 1/4 tsp red pepper flakes (optional, for a little kick!)
  • Salt and freshly ground black pepper to taste
For Garnish (Optional but recommended!): Freshly grated Parmesan cheese
  • More fresh basil leaves

Instructions

  • Get Your Pasta Going: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to package directions until al dente (this means it should be firm to the bite, not mushy!). Before draining, reserve about 1/2 cup of the pasta water – it’s liquid gold for our sauce!
  • Sauté the Aromatics: While the pasta is cooking, heat the olive oil in a large skillet or pan over medium heat. Add the sliced garlic and red pepper flakes (if using) and cook for about 1-2 minutes until fragrant. Be careful not to burn the garlic!
  • Shrimp Time! Add the shrimp to the pan and cook for 2-3 minutes, stirring occasionally, until they turn pink and opaque. Don’t overcook them, or they’ll get rubbery! Remove the shrimp from the pan and set aside.
  • Build the Sauce: Pour the crushed tomatoes and broth into the same skillet. Bring to a gentle simmer, then reduce the heat to low. Let it cook for about 5-7 minutes, allowing the flavours to meld. If the sauce seems too thick, add a splash of that reserved pasta water!
  • Bring it All Together: Add most of the fresh basil into the sauce, along with the cooked shrimp. Season with salt and pepper to taste. Stir well.
  • Combine and Serve: Drain the cooked pasta and add it directly into the skillet with the sauce. Toss everything together until the pasta is well-coated.
  • Garnish & Enjoy! Divide the pasta among serving plates. Garnish with more fresh basil and a generous sprinkle of Parmesan cheese. Serve immediately and prepare for happy sighs!

Chef’s Notes & Tips:
  • Quality matters: Using good-quality crushed tomatoes makes a difference in the sauce.
  • Don’t skip the pasta water: It helps emulsify the sauce and gives it a silky texture.
  • Experiment! Feel free to add a splash of white wine to the sauce after the garlic, or a squeeze of lemon juice at the end for extra brightness.

Enjoy your delicious, homemade Italian-inspired feast!
