Bacon & Egg Breakfast Wrap

On a crisp Glasgow morning, when the kettle is boiling and you need a breakfast that is quick, hearty, and utterly satisfying, nothing beats a hot breakfast wrap. But this isn't just any drive-thru takeaway—this is a elevated, chef-style Bacon & Egg Breakfast Wrap with ultra-fluffy scrambled eggs, crispy Scottish dry-cured bacon, melted sharp cheddar, and a crispy toasted exterior.

To make this breakfast truly special, I source thick-cut dry-cured back bacon from local Scottish farms and pair it with fresh free-range eggs. Cooked to perfection in a heavy ProCook cast-iron skillet and served on handcrafted stoneware from Denby Pottery, this 10-minute wrap is about to become your ultimate weekend morning ritual.

Here is how to get cafe-quality results right in your own kitchen!

The Ingredients

(Serves 2)

  • 4 rashers Scottish dry-cured smoked back bacon (thick-cut works best)
  • 4 large Corrie Mains Farm free-range eggs (room temperature)
  • 2 large Soft flour tortilla wraps
  • 60g Mature Scottish Cheddar, finely grated
  • 1 tbsp Scottish butter (like Graham's or Mossgiel)
  • 1 tbsp Fresh chives, finely chopped
  • 1 tbsp HP Brown Sauce or Sriracha Mayo (depending on your mood!)
  • A pinch of flaky sea salt and freshly cracked black pepper

The Chef’s Step-by-Step Method

Step 1: Crisp the Bacon

Place a dry cast-iron skillet over medium-high heat. Lay the bacon rashers in the pan and cook for 3–4 minutes per side until the fat is fully rendered and the bacon is deeply golden and crispy.

Chef’s Tip:

Transfer the cooked bacon to a plate lined with kitchen paper, but do not wipe out the pan! That rendered bacon fat is liquid gold and will be used to toast our wraps later for incredible flavor.

Step 2: The French-Style Soft Scramble

Crack the eggs into a bowl, add a small pinch of salt, and whisk thoroughly with a fork until smooth and uniform. Place a small non-stick saucepan over low heat and melt the butter. Pour in the eggs. Using a silicone spatula, gently sweep the eggs across the bottom of the pan continuously. Cook on low heat until soft, glossy, velvety curds form (about 2–3 minutes). Remove from the heat while they are still slightly soft—they will continue to cook in their residual heat! Fold in the chopped chives and black pepper.

Step 3: Layer & Roll

Warm the flour tortillas in the microwave for 10 seconds so they become pliable.

Sprinkle half of the grated Scottish cheddar right in the center of each wrap (this creates a cheesy barrier that stops the wrap from getting soggy).

Spoon the warm, fluffy scrambled eggs evenly over the cheese.

Top each with two rashers of crispy bacon.

Drizzle with your choice of HP brown sauce or spicy mayo.

Fold the bottom edge up over the filling, fold in both sides, and roll tightly into a neat burrito shape.

Step 4: The Crispy Pan-Seal

Reheat your skillet with the leftover bacon fat over medium heat. Place your wraps seam-side down in the pan. Press down gently with a spatula and toast for 1–2 minutes until the seam is golden brown and sealed shut. Flip and toast the top side for another minute until warm, golden, and crispy.

Chef’s Culinary Advice & Variations

How to Avoid Rubbery Eggs: Never cook your eggs on high heat, and don't over-whisk them hours in advance. Gentle heat and constant stirring create lush, velvety curds that stay tender inside the wrap.

Veggie Boost: Add a handful of fresh baby spinach or roasted cherry tomatoes onto the cheese layer before adding the eggs.

Make-Ahead Breakfast: You can wrap these tightly in foil and keep them in the fridge overnight. In the morning, pop the foil-wrapped package into a preheated oven at 180°C for 12–15 minutes until piping hot and melted!
