Today, I am sharing my go-to recipe for Flaxseed & Walnut Porridge. This isn't just any oatmeal; it is a nutrient-dense powerhouse packed with Omega-3s, plant-based protein, and incredible texture. To make this truly special, I took a quick walk to my local Waitrose to source the finest Scottish jumbo rolled oats and fresh walnuts.
Cooked slowly in my trusty ProCook saucepan and served in a beautiful Denby Pottery bowl, this 10-minute recipe feels like a luxurious cafe experience right in your own kitchen.


Here is how to elevate your morning routine with this healthy, toasted, and creamy masterpiece!


The Ingredients



  • 50g Scottish Jumbo Rolled Oats
  • 200ml Unsweetened Almond Milk or Whole Scottish Milk (plus a splash extra for serving)
  • 1 tbsp Milled (Ground) Flaxseed
  • 30g Raw Walnuts, roughly chopped
  • 1 tsp Scottish Heather Honey or pure Maple Syrup
  • 1/2 tsp Ground Cinnamon
  • A pinch of flaky sea salt (like Maldon)
  • Optional Garnish: Fresh berries or sliced banana

The Chef’s Step-by-Step Method

Step 1: The Dry Toast


Place your ProCook saucepan over medium heat. Before adding any liquid, toss in your chopped walnuts and the Scottish jumbo oats. Stir them continuously for about 2 minutes until the walnuts smell incredibly fragrant and the oats take on a slightly golden hue.
