This is a fantastic one-pan (or two-pan, if you like crispy potatoes) meal that’s satisfying and full of flavour. Rustic and quick!
Yields:
- 4 servings Prep time: 15 minutes Cook time: 25-30 minutes Cooking Method: Skillet Sauté
- Ingredients:0.700 kg, peeled and diced into 1/2-inch cubes
- 2 tbsp olive oil (divided)
- 0.450 kg
- 1 small onion, diced (optional)
- 2 cloves garlic, minced (optional)
- 1 cup green beans (fresh, trimmed and cut into 1-inch pieces, or frozen)
- 1 cup corn (fresh, kernels removed, or frozen)
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions:
- Cook Potatoes: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add diced potatoes and cook, stirring occasionally, until tender and golden brown, about 15-20 minutes. You might need to cover it for some of the cooking to ensure they cook through. Remove potatoes from the skillet and set aside.
- Cook Beef: Add the remaining 1 tbsp olive oil to the same skillet (or use a separate skillet if you prefer). Add ground beef and cook, breaking it up, until browned and cooked through. Drain any excess fat.
- Sauté Aromatics & Vegetables: Add diced onion and minced garlic (if using) to the beef and cook until softened, about 3-5 minutes. Stir in green beans and corn, paprika, and oregano. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Combine Hash: Return the cooked potatoes to the skillet with the beef and vegetables. Toss everything together to combine and heat through. Season generously with salt and freshly ground black pepper.
- Serve: Serve hot, garnished with fresh parsley if desired.
Chef’s Tips:
- Extra Crispy Potatoes: For super crispy potatoes, don’t overcrowd the pan. Cook them in batches if necessary, or use a separate skillet.
- Egg Topping: For a breakfast-for-dinner twist, fry up some eggs and serve them on top of the hash!
- Spice It Up: A dash of your favourite hot sauce or some chilli powder can add a pleasant kick.
