Today, I’m sharing a recipe that is easy, beautiful, and incredibly tasty – Baked Tomatoes with Eggs!
This dish is perfect for breakfast, brunch, or even a light dinner. Combining juicy tomatoes, creamy eggs, and flavorful herbs makes it an absolute delight. Plus, it’s healthy, low-carb, and full of vitamins!
Servings: 4
Ingredients:
- 4 large ripe tomatoes
- 4 medium eggs
- 50g shredded cheese (cheddar, mozzarella, or parmesan)
- 1 clove garlic, minced
- 1 tablespoon chopped fresh parsley (or basil)
- Salt and black pepper to taste
- A pinch of red pepper flakes (optional, for a little spice)
- 1 tablespoon olive oil
How to Make It:
1. Prep the Tomatoes
- Preheat your oven to 180°C (350°F).
- Cut the tops off the tomatoes and carefully scoop out the insides with a spoon. Be gentle so you don’t break the tomato walls.
- Sprinkle the inside with a pinch of salt and turn them upside down on a paper towel for a few minutes to drain excess liquid.
2. Fill the Tomatoes
- Place the tomatoes in a greased baking dish.
- Add a tiny bit of shredded cheese at the bottom (this helps absorb moisture and adds extra flavour).
- Crack an egg into each tomato. Be careful not to break the yolk.
- Sprinkle with salt, pepper, minced garlic, and red pepper flakes.
- Top with the rest of the cheese and a drizzle of olive oil.
3. Bake to Perfection
- Place the dish in the oven and bake for 15-20 minutes, depending on how runny or firm you like your eggs.
- Once done, sprinkle with fresh parsley for extra flavour and freshness.
