Pumpkin & Apple Casserole: A Cosy and Flavourful Treat
Today, I’m bringing you a warm, comforting dish that’s perfect for autumn (or honestly, any season when you crave something cosy!). This Pumpkin & Apple Casserole is soft, slightly sweet, and bursting with fall flavours. The natural sweetness of pumpkin pairs beautifully with the tartness of apples, and a touch of cinnamon makes it irresistible!

Ingredients:
- 300g pumpkin (peeled and cubed)
- 2 large apples (peeled and sliced)
- 2 eggs
- 1/2 cup milk (or plant-based alternative)
- 2 tablespoons honey (or sugar)
- 3 tablespoons semolina (or flour)
- 1 tablespoon melted butter
- A pinch of salt
- 1/2 teaspoon cinnamon
- Zest of 1/2 lemon
- 2 tablespoons chopped walnuts (optional, but highly recommended!)
Instructions:

Preheat your oven to 180°C (350°F). Peel the pumpkin and cut it into small cubes. Peel and slice the apples thinly. You want them soft and easy to mix into the batter.Place the pumpkin cubes in a small pot with a bit of water and cook for 10 minutes until soft. Drain and mash them with a fork or blend for a smoother texture. Let cool slightly.In a large bowl, whisk together the eggs, milk, honey, cinnamon, lemon zest, and a pinch of salt. This will be the flavorful base for our casserole.Stir in the semolina (or flour) to help the casserole hold its shape. If you’re using semolina, let the mixture sit for 5 minutes so it absorbs the liquid.Gently fold in the mashed pumpkin, apple slices, and chopped walnuts (if using). The apples will add a lovely tart contrast to the sweetness of the pumpkin.Grease a baking dish with melted butter and pour in the mixture. Smooth the top and bake for 35-40 minutes or until golden and set. You’ll know it’s ready when a toothpick inserted in the centre comes out clean!Let the casserole cool slightly before slicing. It’s delicious warm, but even better after resting for a bit. Serve with a dollop of sour cream, a drizzle of honey, or a sprinkle of cinnamon.
