Servings: 4-6 portions
Ingredients:
- 2 large carrots, peeled and chopped
- 2 medium potatoes, diced
- 1 small eggplant, chopped
- 1 red bell pepper, sliced
- 2 large tomatoes, chopped (or 1 cup canned diced tomatoes)
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 cup of zucchini or broccoli florets
- 1/2 cup corn or green peas
- 1 can (15 oz) chickpeas or kidney beans, drained
- 2 tablespoons olive oil
- 3 cups vegetable broth
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon chilli flakes (optional)
- 1 teaspoon dried oregano or thyme
- 1 tablespoon lemon juice
- Fresh parsley or basil for garnish
Instructions:
- Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and golden, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
- Add the vegetables: Toss in the carrots, potatoes, and eggplant. Stir well and cook for 5 minutes, allowing them to soften slightly.
- Build the flavour: Add the bell pepper, zucchini, tomatoes, corn, and chickpeas. Sprinkle in the salt, pepper, chilli flakes, and dried herbs. Mix everything well.
- Simmer to perfection: Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and let the stew simmer for 25–30 minutes until all vegetables are tender, and flavours meld together.
- Final touch: Stir in the lemon juice for brightness and adjust seasoning if needed. Let it sit for a couple of minutes before serving.
- Serve and enjoy! Ladle the stew into bowls, garnish with fresh parsley or basil, and serve with crusty bread or rice for a complete meal.
