Hearty Vegetable Stew – A Cosy and Nourishing Dish

 



There’s nothing more comforting than a bowl of warm, flavorful vegetable stew! Packed with colourful veggies, aromatic herbs, and a rich broth, this dish is not only delicious but also incredibly nutritious. Whether you’re looking for a light meal or a hearty side, this vegetable stew is the perfect way to enjoy the best seasonal produce.

Servings: 4-6 portions
Ingredients:

  • 2 large carrots, peeled and chopped
  • 2 medium potatoes, diced
  • 1 small eggplant, chopped
  • 1 red bell pepper, sliced
  • 2 large tomatoes, chopped (or 1 cup canned diced tomatoes)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup of zucchini or broccoli florets
  • 1/2 cup corn or green peas
  • 1 can (15 oz) chickpeas or kidney beans, drained
  • 2 tablespoons olive oil
  • 3 cups vegetable broth
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chilli flakes (optional)
  • 1 teaspoon dried oregano or thyme
  • 1 tablespoon lemon juice
  • Fresh parsley or basil for garnish


Instructions: 

  • Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and golden, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
  • Add the vegetables: Toss in the carrots, potatoes, and eggplant. Stir well and cook for 5 minutes, allowing them to soften slightly.
  • Build the flavour: Add the bell pepper, zucchini, tomatoes, corn, and chickpeas. Sprinkle in the salt, pepper, chilli flakes, and dried herbs. Mix everything well.
  • Simmer to perfection: Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and let the stew simmer for 25–30 minutes until all vegetables are tender, and flavours meld together.
  • Final touch: Stir in the lemon juice for brightness and adjust seasoning if needed. Let it sit for a couple of minutes before serving.
  • Serve and enjoy! Ladle the stew into bowls, garnish with fresh parsley or basil, and serve with crusty bread or rice for a complete meal.


Tip: 

This stew tastes even better the next day! Store leftovers in the fridge for up to 3 days and reheat for a quick and comforting meal.
