Hearty Stewed Potatoes with Mushrooms

 



There’s nothing quite as satisfying as a bowl of tender stewed potatoes with mushrooms. This dish is rich in flavour, wonderfully filling, and perfect for cosy evenings at home. The earthy aroma of mushrooms, combined with soft, buttery potatoes and fragrant herbs, creates a meal that feels like a warm hug. Plus, it’s incredibly simple to make!

Servings: 4 portions
Ingredients:

  • 4 medium potatoes
  • 200g mushrooms (such as cremini, white button, or wild mushrooms)
  • 1 large onion
  • 2 cloves of garlic
  • 2 tablespoons vegetable oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 500ml vegetable broth
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions:

  • Prep the Ingredients: Peel the potatoes and cut them into medium-sized cubes. Slice the mushrooms, chop the onion, and mince the garlic.
  • Sauté for Flavour: In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, sautéing until soft and fragrant. Next, add the mushrooms and cook for about 5 minutes until they release their juices and become golden.
  • Simmer to Perfection: Add the potatoes to the pot and sprinkle in the smoked paprika, thyme, and bay leaf. Stir well to coat everything in the spices. Pour in the vegetable broth and bring to a gentle simmer. Cover and cook for about 25-30 minutes, stirring occasionally, until the potatoes are fork-tender.
  • Final Touches: Season with salt and black pepper to taste. Remove the bay leaf, then garnish with freshly chopped parsley.
  • Serve & Enjoy: This dish is perfect on its own or served with a slice of crusty bread. You can also pair it with a fresh salad for a well-balanced meal.
